I'm Flattered!

My sister-in-law Leisa, mentioned that she like the soup that
I made for Wades’ baptism,
and that I should put the recipe on our blog.
She liked it...she really like it!
It wasn’t even my best batch.
But thanks -
So here it is.

Tortilla soup:
Melt ½ stick of butter in large pan.
Add ½ cup of flour to make a paste.
Add two cans of chicken broth.
Add one large can of red enchilada sauce.
Add one can of diced green chilies (optional)
Add two large cans of diced tomatoes.
Add two cups of water.

(simmer uncovered for a half a hour.)

Then add four cups of cooked cubed chicken.
One or two cans of small black beans.
Two cans of *white Niblet corn.

Garnish with sour cream, salsa, guacamole, and tortilla chips.

ENJOY!
